Just in time for a poolside party or lounging on the patio, Valencia Group’s hotel bars have unleashed a new menu of poptails, a sinfully spirited spin on the popsicle. Here’s how you can craft your own grown-up versions of the classic treat.


It’s easy to be transported back to childhood summers spent soaking up the sun while you enjoy the newest additions to Valencia Group’s bars. Perfect for splashing in the shimmering rooftop pool outside Houston’s Monnalisa or cooling down while taking in views of San Jose’s Santa Cruz Mountains, Valencia Group’s new seasonal menu of alcoholic “poptails” provide a sweet, frozen twist on traditional cocktails. In fact, the hotels have rolled out a series of special summer packages built around the idea.

But the fun doesn’t have to stop when you head home (or when summer’s over). These four recipes will help you keep the spirit of vacation going any time you want. All that’s missing is the twinkling melody of an ice cream truck.

 

Strawberry “Sharktini”

[HOTEL VALENCIA SANTANA ROW, SAN JOSE, CA]
Ingredients
  • 1 ¼ oz. Pinnacle Vanilla vodka
  • ½ oz. Fresh lemon juice
  • ½ oz. Blue Curacao
Preparation
  1. Mix together and garnish with sliced strawberry and shark gummies.

 

Cosmologic

[HOTEL SORELLA CITYCENTRE, HOUSTON, TX]
Cocktail Ingredients
  • 2 oz. Citrus flavored vodka
  • ¼ oz. Lime juice
  • ¼ oz. Triple Sec
  • ½ oz. Cranberry juice
Popsicle Ingredients
  • 2¼ oz. Cranberry juice
  • ¼ oz. Orange juice
  • ½ oz. Lime juice
Preparation
  1. Combine popsicle ingredients into mold and let freeze overnight.
  2. Mix cocktail ingredients in shaker, pour in a martini glass, add popsicle and garnish with lemon peel.

 

Cherry Freeze

[LONE STAR COURT, AUSTIN, TX]
Ingredients
  • 1 ½ oz. Vodka
  • ½ oz. Lime juice
  • ½ oz. Simple syrup
  • ¼ Grenadine
Preparation
  1. Shake well and strain into a lowball glass.
  2. Top with Sprite, cherry popsicle, and a lime wedge.

 

C-Stat Cooler

[CAVALRY COURT, COLLEGE STATION, TX]
Ingredients
  • 1 ½ oz. Deep Eddy Lemon Vodka
  • ½ oz. Midori Melon Liqueur
  • 1 ½ oz. Lemonade (best homemade!)
Preparation
  1. In a shaker tin, add the ingredients, shake, and strain into a martini glass.
  2. Garnish with lime, strawberry, and fresh strawberry popsicle.

 

Tequila Sunrise

[HOTEL ALESSANDRA, HOUSTON, TX]
Ingredients
  • 2 oz. Patron Silver
  • 4 oz. Freshly squeezed orange juice with pulp
  • 2 tsp. Light agave nectar/li>
  • 2 tsp. Key Lime juice
  • 2 tbsp. Grenadine
Preparation
  1. Add tequila, orange juice, agave nectar, and lime juice into a blender.
  2. Pour blended mixture into popsicle molds with sticks and freeze for 15 minutes.
  3. Add the grenadine after partially frozen and let freeze for 2 more hours.

Makes 1 popsicle.
